Junior Strider Recipe #2
We have lots of allergies and food preferences in our house so it can be a challenge to find a recipe we can all safely enjoy. Here is an easy to make yummy summer drink to keep you cool in the summer.
Mango Coconut Smoothies
1 1/2 cups of light coconut milk (we like refrigerated unsweetened So Delicious)
1 ripe banana
1 1/2 cups mango chunks (slightly thawed)
juice of one lime
Optional (if you like a thinner consistency) - we add a little bit of orange juice (which makes it like a creamsicle!) and we add enough to give it the desired consistency.
Place everything in a blender in the listed order. Blend on high until smooth. Serve immediately.
